Herb-Marinated Steak

Serves 8

½ small sweet onion, minced

3 garlic cloves, minced

1/3 cup olive oil

1 tablespoon balsamic vinegar

2 tablespoons chopped fresh basil

1 tablespoon chopped fresh thyme

1 tablespoon chopped fresh rosemary

1 teaspoon salt

½ teaspoon dried crushed red pepper

1¾ pounds flat iron steak

In a large plastic sealable bag, place the onion, garlic, olive oil, vinegar, basil, thyme, rosemary, salt and crushed red pepper. Squeeze the bag to mix the ingredients. Add the flat iron steak, seal the bag, and marinate in the refrigerator for at least 30 minutes or several hours. Remove the steak from the marinade, discarding the marinade.

Preheat teh grill to high heat. Grill the steak, covered with the grill lid, 7 to 9 minutes on each side or to desired degree of doneness. Remove from the grill. Let stand for 10 minutes. Cut across the grain into thin slices.
