New York City restaurateurs enter ‘uncharted territory’ in Deerfield with new Asian fusion restaurant

DEERFIELD — With 20 years of New York City restaurant experience under their belts, Nick and Colleen Fang have opted to bring All of Us Natural Foods, an Asian fusion restaurant with a vegan twist, to Deerfield.

After spending decades in the “never-ending rat race” of Manhattan, Nick Fang said his family wanted to move to a smaller town and plant their roots, while continuing their passion of serving food. In searching for a new home, the couple, along with their 5-month-old child, found Deerfield and saw an opportunity to open a restaurant in the Tibetan Plaza at 265 Greenfield Road, in the former site of Hillside Pizza, which moved into Yankee Candle last year.

“We’re restaurant people. That’s pretty much all we do,” Fang said. “It’s scary doing business in a new locale ... but it’s a good town and a great location.”

When it comes to Asian fusion, Fang said creating a soy-free, nut-free and majority gluten-free menu was “very challenging,” but it’s a chance to flex his creative cooking muscles and try something new.

“It required a huge amount of (research and development) and testing,” he said. “It’s uncharted territory and I’m having a lot of fun doing it.”

All of Us, which opened three weeks ago, offers a variety of organic dishes, like Japanese yakisoba noodles, sweet and sour vegetables and mapo cauliflower — which is a traditional Chinese dish, usually made with tofu, featuring a spicy sauce.

The inspiration for the food, Fang said, came from his time working in restaurants with “everything from Korean food, sushi, traditional Chinese” food and even some time in a Spanish tapas restaurant. A self-described specialist in “bringing out flavor,” Fang makes all of his dishes from scratch, which is exactly what he would want a restaurant he eats at to do.

“We wanted to create a restaurant where we could feel happy and comfortable eating at. Anybody can come in here and feel a comfortable and warming vibe,” Fang said, adding that organic food gives him a feeling he hopes everyone feels. “It makes me happy and makes me feel good after eating it.”

As they settle in and fill out their staff, Fang hopes to add more creations to the menu, while becoming “good neighbors and valued members of the community.”

Part of that process, he said, is connecting with the farming community and reaching out to get local produce — a far cry from the New York City experience of food being pushed off a delivery truck on a crowded street.

“I can’t wait to buy directly from local farms. The produce is great here,” Fang said. He added they are also looking forward to working with the community and nonprofits to help those who are less fortunate. “It’s something I’ve done in the past and want to continue, to use our prosperity and good fortune.”

All of Us is located in Deerfield’s Tibetan Plaza at 265 Greenfield Road and is open Wednesday through Sunday from 11:30 a.m. to 8 p.m. The restaurant can be found on Facebook (and orders can be placed through a link there) or can be called at 413-350-5195.
