My daughter has a condition, mast cell activation syndrome (MCAS), resulting in unexplained allergic reactions, including anaphylaxis, which is life-threatening. One treatment that helps alleviate symptoms is a low histamine diet. She needs to eat an animal protein diet to prevent anemia. Meat, once butchered, releases histamine. In order for her to have the protein she needs, it must be cooked immediately to minimize histamine accumulation.

River Valley Co-op in Northampton has been so kind and generous. As soon as the beef and chicken come in, they make beef patties and chicken tenders. No extra charge for the extra work. They call me when it’s ready, then I cook and freeze it immediately. I am greatly appreciate the meat department’s understanding of my daughter’s ailment and their support.

When you have a family member with a rare disease, life is a bit harder. Thank you, River Valley, for lightening my load.
