Valley Bounty: Cheese
Several local farms make delicious cheese from the milk of their own cows or goats. Fresh, local cheeses span the flavor-range from mild paneer (perfect for cooking) to creamy chevre and salty feta. Aged, yellow rounds of cheese are also available at local shops, direct from farms or at farmers markets, which are starting up soon for the summer.
