SAVING SUMMER’S BOUNTY
Tomatoes — one of summer’s most popular vegetables (although botanically a fruit) — keep on rolling in. Here are some storage tips if you’re awash in them.
e_SBlt Store tomatoes at room temperature in a well-ventilated basket or bowl; use within a few days. Don’t store tomatoes in the refrigerator because they will become mealy.
e_SBlt Freeze tomatoes peeled or unpeeled. To peel, remove stem, score an “X” on the bottom and blanch in boiling water for about 30 seconds. Use a slotted spoon to remove the tomatoes. The skin should easily slip off. Or quarter the tomatoes. Either way, place them in freezer bags. Seal and date.
