Fresh in the Valley: Dandelion Greens

This time of year something really green is in order and dandelion greens can be just that. Historically billed as a spring tonic, they are supposed to get your juices flowing and are thought to be good for the liver and the kidneys. They are usually found near the kale and chard in the grocery store.

Chop in 1-inch pieces and blanch in boiling water for a few minutes until wilted. Drain, then saute in butter or olive oil with chopped garlic. Season to taste.
